From coffee growers in Chiapas and Oaxaca, Mexico, at 900–1,000M, Typica, Criollo, Bourbon, Mundo Novo, and Caturra varieties are fully washed and sun-dried in clay mineral soil. Chocolate, cinnamon, and green apple — a medium roast with a distinctive spiced finish that sets it apart from other Latin American origins. Flame-Tuned roasting develops the cinnamon note without pushing it into sharpness.
